Have special chicken fried rice for lunch
Fried rice can be made in different ways with a variety of ingredients. Here is how to make special chicken fried rice.
- Boneless chicken: 400 grams (chopped)
- Garlic: 7 cloves (finely sliced)
- Carrot: 1 nos (diced)
- Red capsicum: 2 tablespoons (chopped)
- Vinegar: 1 tablespoon
- Black pepper: As per taste
- Refined oil: As per requirement
- Rice: 1 cup
- Onion: 2 tablespoons (finely sliced)
- Capsicum: 2 tablespoons (chopped)
- Soy sauce: 2 teaspoons
- Salt: As per taste
- Lemon juice: 1 teaspoon
- Water: As per requirement
Thoroughly wash the rice and soak it for at least 20 minutes. Take the chicken pieces in a bowl and marinate it with salt and pepper. Keep it aside. Boil 2 cups of water in a saucepan and cook the rice. Take it off once the rice is 80 percent cooked. Strain and keep the rice aside. Heat up oil in a pan and fry the chicken until golden brown. Keep it aside.
Heat up two tablespoons of oil in another pan and sauté the garlic and onions until soft. Then add the remaining vegetables and stir-fry on a high heat for 2-3 minutes. Add soy sauce and black pepper and salt as per taste. Mix well and and the chicken and combine well. Add the rice and mix. Be careful not to break up the rice grains.
Cook with the lid on for about 1 minute. Then turn off the heat and open the lid. Pour in the vinegar and mix. Cover with the lid and let it rest for 10 minutes. Serve hot.
