Spinach rice

Bored of rice and dal? Try a variety of rice today. Cook baby spinach with the rice to bring out the colour in this vegetarian side dish - perfect


  • Rice- 1cup
  • Spinach- 100 grams
  • Onion- 1 chopped
  • Green chillies- 2
  • Bay leaf
  • Coriander and mint leaves- chopped
  • Cumin seeds- ½ tsp
  • Oil- 1 ½ tsp
  • Cardamom- 2
  • Star anise- 1
  • Garlic cloves- 2 chopped
  • Garam masala- ¾ spoon
  • Turmeric powder- ⅛ tsp
  • Lemon juice
  • Salt

Cook rice and keep it aside. Now take a mixer jar, add the spinach with a pinch of salt and blend it. Make a spinach puree. Keep it aside.

Take a pan and add oil. Put bay leaf, cumin seeds, cardamom, star anise and saute well. Now add garlic and green chillies. Saute for 3-4 minutes. Now add onion and fry them until it turns golden. Add garam masala, turmeric and salt to it. Saute everything well. Add the spinach puree. After cooking it for a few minutes add rice and mix well. Now add mint leaves and coriander leaves chopped. Squeeze a lemon to the spinach rice. Mix well and serve hot.
