Take the Toor dal and soak it in water for four hours. Grind it clearly and keep it aside for eight hours.
Meantime, let’s make the egg roast. Take the boiled eggs, cut it into small pieces and add chilli powder and salt to it. Mix it well.
Now, take a kadai, place it on the stove and pour some oil into it. Once it starts boiling, add mustard, fenugreek and curry leaves and mix for half a minute. Later, add green chilli, garlic, ginger and onions to the tadka and mix again.
Afterwards, add tomato, garam masala, chilli powder, turmeric powder, coriander powder and cook it under medium flame.
Now, place a tawa on the stove, pour some ghee and heat it. When the tawa is hot enough, pour a ladle full of dosa batter and spread it evenly into a thin crepe.
As the dosa turns golden brown in colour, flip it, add the egg roast as filling and fold it in half. Your healthy restaurant style egg roast dal dosa is ready to serve!
