‘Milagu chicken’- A feast of traditional spices

'Milagu' chicken

Pepper is the secret magic of our grandmothers while preparing special chicken recipes. The combination of pepper or ‘Milagu’ (in Tamil) and shallots gives a mind-blowing hot experience but leaves you needing more. Try this ‘Milagu chicken’ prepared in shallot rich gravy and hot pepper combination.

Ingredients

  • Chicken - ½ kg
  • Cumin seeds- 1 tbsp
  • Fennel seeds- 1 tbsp
  • Garlic- 4-5 cloves
  • Shallots- 100 gram
  • Chillies -3
  • Ginger- a small piece
  • Chilly powder- ½ tbsp
  • Pepper powder- 2 tbsp
  • Turmeric powder- 1 tsp
  • Salt
  • Oil
  • Curry leaves
  • Coriander leaves- for garnishing
  • Hot water- ½ glass
Procedure

First of all, heat the fennel, cumin and pepper powder in a pan. Powder them well. Next, make a paste of ginger, garlic and chillies. Keep them aside.

Now, take a pan, add oil, shallots, curry leaves and saute it well. When an aroma of the fried onion arrives, add the ginger-garlic-chilly paste. After a good saute, add chilly, turmeric and salt into it. Saute until the raw smell vanishes. Add the chicken into it. Close the lid and cook for a few minutes.

When the water from the chicken comes out, add hot water into it. After boiling, add the cumin, fennel and pepper powder to it. Cook for a minute and add coriander leaves. Close the lid and keep it for setting. The ‘Milagu chicken’ is ready.
