Festival of flavours: Spicy chicken cashew korma


Chicken cashew korma

Try this heavenly combination of chicken, cashews, cream and spicy sauce which gives you a finger-licking experience. Try with rice, chapati or parotta.

Ingredients

  • chicken breast- 1.5 kg
  • cashew nuts- 115 g
  • Onions- 2 large
  • Ginger- 1 tsp
  • cumin seeds- ½ tsp
  • Coriander powder- 2 tbsp
  • Cumin - 1 tbsp
  • chilli powder- 1 tsp
  • Garlic- 4 cloves
  • sunflower oil- 3 tbsp
  • Salt, black pepper - as needed
  • cream- 4 tbsp
  • Corianded- a handful
Procedure
Heat the oil in a saucepan. Add the chopped onions, ginger and fry for 3-4 minutes. Add cumin seeds, coriander, cumin, chilli powder and fry until aromatic. Mix in the chopped garlic and fry.

Add the chicken pieces, cashew nuts and allow the chicken to brown slightly. Keep it in a medium flame. Add salt and black pepper. Slowly cover with boiling water. Reduce the heat and cook for 15 minutes.

Mix in the double cream and cook for 4-5 minutes until the sauce has thickened.

Sprinkle over the chopped fresh coriander and cashew and serve hot.
