Bitter gourd pickle

Before turning your face to bitter gourds, try this tasty pickle with bitter gourds. It is really healthy and goes well with rice and porridge.


Ingredients

  • Bitter gourd- 250 grams
  • Mustard- 1 teaspoon
  • fenugreek seeds- 1 teaspoon
  • white vinegar- 150 ml
  • mustard oil- 4 tablespoon
  • red chilli powder- ½ teaspoon
  • Garlic- 8 to 9
  • green chillies- 5 to 6
  • salt as required

Procedure

Chop the bitter gourd into small pieces after removing seeds. Sprinkle salt on the chopped bitter gourd and mix well. Keep it aside for 30 minutes. Now, squeeze the salted bitter gourd and remove the juice. Rinse and drain well.

Heat the mustard oil, add mustard seeds, fenugreek seeds and fry till the mustard crackles. Add garlic, green chillies and fry for 30 seconds. Then add bitter gourd and saute for 7-8 minutes.

Add vinegar and salt. Stir and bring the pickle mixture to a boil. Add red chilli powder and stir.

Just cover the pan with a cotton napkin. When completely cooled, pour the bitter gourd pickle in a clean sterilised jar.
