Tender banana leaves fry
Keralites love banana flower and banana stem which can be used to make tasty and healthy stir fries and curries. But do you know that the tender banana leaves can too used for a stir fry? Here is the recipe.
- Tender banana leaves: 2 small ones
- Coconut: 1/2 of a coconut
- Cumin: 1/4 teaspoon
- Green chilli: 2 nos
- Garlic: 3 cloves
- Mustard seeds: For crackling
- Turmeric powder: As per taste
- Salt: As per taste
Thoroughly wash and clean the banana leaves and finely chop them. Grate the coconut and throw it into the pestle and mortar along with garlic, cumin, green chilli and some turmeric powder. Crush them finely. Heat up oil in a pan and crackle the mustard seeds. Add the chopped banana leaves, the crushed coconut mix and salt. Mix well and saute. Cook on low-medium heat with the lid on until the banana leaves are well done.
