Instead of rice, cauliflower pieces are used in this dish.</p>  <p><strong>Ingredients</strong></p>  <ul>  <li>Cauliflower -1</li>  <li>Butter- 3 tbsp</li>  <li>Garlic- 1 clove</li>  <li>Cumin - half a teaspoon</li>  <li>Coriander- half a teaspoon</li>  <li>Garam masala- half a teaspoon</li>  <li>Turmeric powder - half a teaspoon</li>  <li>Ginger- 1 inch</li>  <li>Red chillies- 1</li>  <li>Salt- as needed</li>  <li>Peppercorns- a quarter teaspoon</li>  <li>Lemon -1</li>  <li>Coriander leaves- a quarter cup</li> </ul>  <p><strong>Preparation</strong></p>  <p>Take cauliflower pieces and beat in a blender. Heat butter in a bowl and fry garlic, chilli and ginger. Then add cumin, coriander powder, garam masala, turmeric powder, pepper and salt and mix well. Add cauliflower to this and cook for 10 minutes. Now you can garnish it with coriander leaves after squeezing a lemon. Serve hot.</p>]]>

Grind the soaked Bengal gram and set aside half a cup of it. Then add the remaining gram and green chillies into a mixer and grind. Transfer the batter to a bowl, add the remaining ingredients including the half a cup Bengal gram taken before and mix well.</p>  <p>Roll it into 20 small balls and press it into the shape of vada. It suits well with Appam, chapati, Pathiri, vellappam, etc.</p>  <p><u><strong>Ingredients</strong></u></p>  <ul>  <li>Potatoes- 2</li>  <li>Soy chunks- 50 gram</li>  <li>Green peas- 1 cup</li>  <li>Shredded coconut- 1 cup</li>  <li>Shallots- 8</li>  <li>Onions- 2</li>  <li>Tomato-1</li>  <li>Green chillies-3</li>  <li>Ginger- 1 tablespoon</li>  <li>Garlic- 1 tablespoon </li>  <li>Turmeric powder- 1/2 tsp</li>  <li>Coriander powder- 2 tbsp</li>  <li>Chilli powder- 1 1/2  tbsp</li>  <li>Garam masala- 1/2  tsp</li>  <li>Coconut chopped in cubes</li>  <li>Coconut oil - as needed</li>  <li>Curry leaves - as needed</li>  <li>Salt- as needed</li>  <li>Water - as needed</li> </ul>  <p><u><strong>Procedure</strong></u></p>  <p>First, fry coconut in the oil, add shredded coconut and 3 shallots. Fry till it turns brown. When the coconut turns brown, add turmeric powder, coriander powder and chilli powder. Fry them and after cooling, grind them into a paste. Put soy chunks in boiling water, boil for two minutes, then rinse with cold water and squeeze. </p>  <p>Heat coconut oil in a pan, add sliced ​​potatoes and fry. Add soy chunks to the same coconut oil and set aside. Heat some coconut oil in the same pan, add ginger, garlic, onion, green chillies and curry leaves. When it is cooked, add coconut cubes and fry. Add salt.</p>  <p>Add turmeric powder, coriander powder and chilli powder to the onion and fry for a while, then add the tomatoes and fry.</p>  <p>Once the tomatoes are cooked, add the roasted potatoes, soy chunks and enough water and cook. When the potatoes are half cooked, add the green peas with salt. Now, add roasted coconut and mix well. Now open the pan, add garam masala, stir. Heat coconut oil in a small pan and add chopped onion and curry leaves to the masala curry. Curry is ready to serve.</p>]]>

Try this 'Milagu chicken' prepared in shallot rich gravy and hot pepper combination.</p>  <p><strong><u>Ingredients</u></strong></p>  <ul>  <li>Chicken - 1/2 kg</li>  <li>Cumin seeds- 1 tbsp</li>  <li>Fennel seeds- 1 tbsp</li>  <li>Garlic- 4-5 cloves</li>  <li>Shallots- 100 gram</li>  <li>Chillies -3</li>  <li>Ginger- a small piece</li>  <li>Chilly powder- 1/2 tbsp</li>  <li>Pepper powder- 2 tbsp</li>  <li>Turmeric powder- 1 tsp</li>  <li>Salt</li>  <li>Oil</li>  <li>Curry leaves</li>  <li>Coriander leaves- for garnishing </li>  <li>Hot water- 1/2 glass</li> </ul>  <p><u><strong>Procedure</strong></u></p>  <p>First of all, heat the fennel, cumin and pepper powder in a pan. Powder them well. Next, make a paste of ginger, garlic and chillies. Keep them aside.</p>  <p>Now, take a pan, add oil, shallots, curry leaves and saute it well. When an aroma of the fried onion arrives, add the ginger-garlic-chilly paste. After a good saute, add chilly, turmeric and salt into it. Saute until the raw smell vanishes. Add the chicken into it. Close the lid and cook for a few minutes.</p>  <p>When the water from the chicken comes out, add hot water into it. After boiling, add the cumin, fennel and pepper powder to it. Cook for a minute and add coriander leaves. Close the lid and keep it for setting. The 'Milagu chicken' is ready.</p>]]>
