Mangoes are one of the most popular fruits of Keralites. The soaring price of mangoes might have made many of us search for ways to keep raw mangoes for long so that we can enjoy it even during off seasons.
If raw mangoes are stocked during seasons, they can be stored for months to make chutney, pickle and to flavour curries using a simple trick with no artificial substances that harm health.
Steps to preserve raw mango
Collect raw mangoes and remove peel.
Cut the mangoes into small pieces.
Take a bowl of water to dip the mangoes.
Add one tablespoon of sugar and one teaspoon of vinegar.
Soak the mangoes in the solution for five minutes.
Drain the water and remove moisture from mangoes.
Put the mangoes in another bowl and freeze for two hours.
Transfer the frozen mango to a cover and keep in a plastic box inside the fridge.
This cut mango pieces can be safely stored for upto one year.
Take the mango out of the fridge a few minutes before using to bring to normal temperature.
