Cookies from banana stem (Vazha pindi); Here's how!
The National Research Centre for Banana (NRCB) in Tiruchirappalli has developed a technology to convert banana stalk into flour and make biscuit and cookies using it.
Banana stalk juice is used to cure diabetes, blood pressure, constipation and kidney stone as it has high fiber content. The research on how to utilize this on an industrial scale resulted in the invention of cookies.
First banana stalk is washed well and chopped into small pieces. This is soaked in potassium metabisulfite solution for 10 minutes. Then the stalk pieces are dried using cabinet dryer. This is ground in a grinder and then filtered to collect the fine powder.
The banana stalk powder can be mixed with other flours in different ratio to make cookies and biscuits. Compared to other flours, these products are highly nutritious. A technology to produce candies from banana stalk also is available.
