Mixed fruit cake
A healthy cake that can be easily prepared at home.
Pineapple, chopped to small pieces – ½ cup
Apple, chopped to small pieces – ½ cup
Dates, chopped to small pieces – ½ cup
Almond, chopped to small pieces – ¼ cup
Maida - 1 kg
Food colours (yellow, red) – 1 pinch
Baking powder – 1 pinch
Cashew nut, cut into pieces – ¼ cup
Almond, cut into pieces – 10 nos
Egg – 3 nos
Butter – 400g
Sugar – 400g
Ghee – 50ml
In a pan fry the chopped fruits in ghee.
Mix maida, baking powder, red food colour, yellow food colour and make it into batter.
Add sugar to the egg and beat well. Add butter, vanilla essence, cashew nuts, almonds and the fried fruits to this and mix well. Add this mixture to the above batter and mix well.
Pour it into the baking pan coated with butter paper and bake for 45 minutes at 150-degree temperature.
Later remove from oven and allow it to cool. Mixed fruit cake is ready.
