Italian Bread Veg Tokri is an easy to make recipe for breakfast and evening snacks. It is a very simple recipe and can be made within few minutes. This delicious and quick recipe can be packed into your kid's lunchbox.

Ingredients

For Crust

White/Brown bread – 6 pieces

Butter – Two tablespoon

Salt – To taste

Oregano – ¼ teaspoon

Dry Chili (smashed) - ¼ teaspoon

Pepper - ¼ teaspoon

For Stuffing

Red Capsicum (chopped to small pieces) – ½ cup

Green Capsicum (chopped to small pieces) – ½ cup

Broccoli (chopped to small pieces) - ½ cup

Sweet Corn (steam cooked) – ½ cup

Onion (chopped to small pieces) – ½ cup

Cheese grated – 1/3 cup

Mozzarella Cheese grated - 1/3 cup

Red Chili (smashed) – Accordingly

Italian mixed herbs – 1 teaspoon

Pepper – ½ teaspoon

Salt – To taste

Preparation

Roll out the bread on a rolling board with the help of rolling pin and then cut each slice into round shape.

Put melted butter in a bowl and add salt, smashed red chilli, oregano and black pepper. Mix it well and keep aside.

Take another bowl and put finely chopped broccoli, green capsicum, onions, boiled sweet corns, cheese, mozzarella cheese, Italian mixed herbs, red chili, pepper and salt. Mix well and keep it aside.

Spread the butter mixture over the bread cut to round. Take stuffing mixture and spread over it. Top it with some mozzarella cheese or processed cheese. Bake in pre-heated oven at 180 degree Celsius for 7-8 minutes.

Take it out and serve hot.
