This evening, after you get back home from work, try one of these. They are delicious.

Cauliflower bajji

Ingredients:

1 medium-size cauliflower

1 ½ cup besan or channa powder

¼ rice powder

1 tsp corn flour

1 ½ tbsp chilli powder

¼ tsp asafoetida powder

½ tsp ginger paste

Tinge of soda powder

Salt as required

Oil as required

Preparation:

First, separate the florets. Cook the florets in boiled water for five minutes. Take out the cauliflower and keep aside. In a separate vessel, make a semi-thick batter mixing all other ingredients. Dip each floret in the batter and deep fry till 'golden-brown' in colour. Garnish with coriander leaves.

Prawn cutlet

 Ingredients:

500 gm prawns

250 gm onion

4 green chillies

Curry leaves

1-piece ginger

1 cup maida

1 ½ tsp red chilli powder

Bread crumps as required

Oil as required

Mustard for seasoning

Salt as required.

Preparation:

Cook the cleaned prawns with salt and chilli powder. Coarsely grind the cooked prawns using a mixer grinder and keep aside.

Heat oil in a pan and splutter mustard seeds. Add chopped green chillies, ginger, onion and curry leaves and saute for a while. When done, add the prawns and bread crumps. Mix well. Make small balls out of it and press using your palms to give a round shape. Dip in maida batter and deep fry in oil. This can be served with tomato sauce or green chutney.

Bread pakoda

Ingredients

3 bread slices

½ cup cooked corn

2 potatoes boiled and mashed

1 onion chopped

2 green chillies chopped

½ cup coriander leaves

3 table spoon channa powder

Tinge of soda powder

1 tsp Kashmiri chilli powder

Salt as required

Oil as required

Preparation

Slice the sides of the bread and keep aside. Heat oil in a thick-bottomed pan and saute thinly-chopped onions and green chillies. Add mashed potatoes, corn, coriander leaves and salt and mix well. In a separate vessel, make a thick batter of channa powder, by adding salt, chilli powder and soda powder. Smear butter on one side of the bread slices and add the vegetable mix on the other side.  Dip in the batter and deep fry. Serve hot with tomato sauce.

Cheese Balls

Ingredients

Potato- 1/2 Kg

Chicken - 1/2 Kg

Egg white- 4

Garlic- 8

Cumin seed- 1Teaspoon

Butter-1 Teaspoon

Bread

Pepper powder-To taste

Preparation

Cook chicken with salt and pepper. Steam potatoes

Mix cooked chicken and crushed potatoes well

Add butter in a sauce pan and saute pepper and cumin seeds [cheese ball]

Mix the cooked chicken and potato into it 

Keep aside this mixture for few minutes

Take little amount of mixture,roll and then flatten it

Dip this in egg white and roll in bread powder

Fry this ball in oil

This cheese ball goes well with mayonnaise and tomato sauce

Aloo Sukka

Ingredients:

3 potatoes (big)

2 green chillies

6 red chillies

1 piece ginger

4 tsp oil

4 garlic cloves

Curry leaves

½ tsp mustard

½ tsp red chilli powder

½ cup coconut (grated)

Salt as required

Preparation:

Peel and parboil potatoes. Chop into finger sized pieces with the same thickness and set aside. Coarsely grind together coconut, red chillies, ginger, garlic and green chillies. In a deep bottomed pan, pour oil and splutter mustard seeds and add curry leaves.

Add the grinded mixture to the pan and sauté for 4 minutes in low flame. Add the potatoes, salt and red chilli powder and cook in low flame for 10 minutes with a lid on. Tasty aloo sukka is ready.
