Vendakka Kichadi- A superb side dish for rice
An ideal and healthy side dish for rice, Vendakka Kichadi is perfect combination of beaten curd, salted sun dried curd chillies and fried ladies’ finger.
Ladies’ finger – 10
Salted curd chillies – 5
Grated coconut- 1 cup
Curd -1 ½ cup
Mustard -1/2 tsp
Fenugreek – ½ tsp
Cumin – ¼ tsp
Salt as required
Fry chopped ladies’ finger in oil and set aside. Thoroughly grind together coconut, mustard and cumin. Heat oil in a pan, pour the grinded coconut mixture and saute for a while. When done, remove from stove.
Add beaten curd and fried ladies’ finger to this. In a separate pan, heat oil and splutter mustard seed along with salted curd chillies, curry leaves and fenugreek. Add salt as required.
