Neyyappam is a popular snack in Kerala prepared from rice, jaggery and ghee.

Easy to make Neyyappam is crispiness and softness mixed in one.

 

Ingredients

1. Rice flour - 2 1/2 cup

2. Wheat powder - 1 1/2 cup

3. Jaggery - 250 grams

4. Milk - 1/2 cup

5. Sesame - 1/2 tsp

6. Sugar - 1 tsp

7. Soda powder - 1/4 tsp

8. Dry coconut (saute in ghee) - 1/4 tsp

9. Cardamom powder - Accordingly

10. Coconut oil - Accordingly 

Preparation

1. Mix rice flour and wheat flour well in thick jaggery solution 

2. Make it in the form of dosa batter 

3. Mix Sesame, Cardamom powder, Sugar, Soda powder and dry coconut into it and keep it aside for 2 hours

4. Heat coconut oil in a pan 

5. Add one spoon of batter into it

6. When the bottom side colour turns brown, flip it over other side with a spoon 

7. Let the other side also turn golden brown

8. Once cooked, remove and drain oil

9. Repeat the same process for the rest of the batter
