Drumstick Leaves Curry (Moringa ila curry)
Drumstick leaves is probably the most nutritious of all greens. It helps to keep your stomach stable and eyes healthy.
Drumstick leaf - I cup
Shallots (small onions) - 7-8 number
Coconut grated - 1 ½ cup
Toor dal soaked - ¼ cup
Raw rice soaked - 2 spoons
Coconut oil - 4 spoons
Cumin - 1 spoon
Mustard - ½ spoon
Turmeric powder - ½ spoon
Red chillies - 2 numbers
Garlic - 4 cloves
2 small onions thinly chopped
Salt as required
Cook dal along with 4 sliced small onions and set aside. Grind together coconut, cumin, garlic, soaked rice and turmeric powder thoroughly.
Heat oil in a pan and splutter mustard seeds and add red chillies. Add drumstick leaves and saute well. In a separate vessel, mix together the cooked dal and the grinded coconut. Add this mixture to the sautéed drumstick leaves.
Heat on a medium flame (do not boil). Turn off the heat when done.
In a thick-bottomed vessel, heat oil and saute the thinly chopped onions and add curry leaves. Pour this into the curry.
